So after going out for a few weeks without getting any rabbits or even seeing one. The other day, my buddy was jumping up and down on a log and a huge beast like monster broke cover and was coming straight for us.
A fatal mauling was prevented through judicial use of #4 Steel shot.
I got to do the chop up work. Heres a quick summary of from snowpile to my plate. The camera is a blackberry so the colour is off abit in a few of the pics and abit blurry.
I sectioned the rabbit and soaked it overnight in rock salt and water.
Rinsed it off for abit
Dried it off, floured it with some thyme, rosemary, pepper, salt mix
Fried it for abit in garlic, onions and olive oil until browned
Added vegetable stock and finished it in the oven for abit
Complete with pepper squash and red swiss chard
All done.
