The Kuhnhausen books are good, as others have said but much of it is geared towards advanced smithing. I also found this reference guide pretty handy when I was first trying to learn some basics about the pistol. Its kind of an "Idiot's Guide" to 1911's. No disrespect to the army or any other person who wants to learn, its just a field level reference aimed at people who aren't gunsmiths.
I was disappointed with the Sweeney books I've seen, lots of pretty pictures but not much beyond that.
