Replaced my synthetic Remington stock with a wood stock. The stock bolt seems too long when I insert it into the wood stock. Once the bolt is screwed all the way in, it leaves about a half inch between the bolt head, and the wood.

So my stock moves back and forth off of the receiver.

My question is, are there different bolt sizes for the standard 870 express between synthetic or wood? or could this be a youth stock maybe? Did different years have different length stock bolts?

You could put several washers to make it fit ( quick fix )

Depends on the combination of stock and bolt. Also, not sure, but I think the longer bolt may impede the pad installation to the synthetic stock. However you can cut the longer bolt and thread it further up if you have the proper die.

I'd just get out the cheap canadian tire tap and die set and thread the bolt further as stated and cut off the excess that will protrude into the receiver.
