I recently bought one of these, + as I was cleaning it I noticed the serial # that is stamped into the receiver is 1 number off of the number ingraved on the bolt. Would this mean that the bolt has been replaced? Or is this normal? On the bolt the # has been engraved not stamped.

I had a 721 but don't recall that the bolt was engraved at all. Maybe someone did it themselves and got mixed up. Is the serial # engraved inside the action above the magazine floor??

This is totally unrelated to the bolt but in case you aren't aware:

Remington 721s have a safety issue which can be pretty deadly. Occasionally when you flip the safety off, it will fire, assuming of course that you have a round in the chamber. My father was nearly killed by his father this way when they were out hunting; granddad had a round chambered and the safety on, sling carry, while going through some dense bush. Dad was behind him when a branch popped the safety off, setting off the rifle. Missed him by a couple of feet and granddad had to spend a good long time sitting down collecting his nerves.

So anyway, seems like a nice rifle but get that safety sorted out if you haven't done so already!

I've been in contact with a gunsmith + he's going to check it over in early Jan. I won;t be using it before then. Isee on remington's home page, that there is a faulty safety on the 721's. The factory will replace the safety for $20.00 U.S. if returned to the factory by the end of dec 05. i won't be going that route, but will have it done up here.
