Looking for some rings for a 30 mm scope. I have liked the Burris with the plastic inserts as they don't mark up the scope can anyone suggest any other options under $200 to go on a weaver rail.

What height? I needed high rings for my application and got a weaver premium one piece 30mm MSR mount and as a first time user I've found it to be super easy to mount my scope and get it dialled in. No inserts but the fact it's a one piece takes a lot of issues out the equation and the 3 rail securing points mean it's super solid. There's a cantilever on the mount but you can reverse the mount or use as is and it gives a lot of adjustment too.
 
It is a 56mm objective so thinking Med to high. I like the idea of the one piece mount.

Coincidentally mine is also a 56mm objective and the mount works perfectly on a Ruger Precision Rimfire. I just like the fact that aligning the rings has that part of the equation removed with the one piece mount. It's also made and priced pretty well. I got mine at Tenda.
 
I know a lot of people rave about the Burris signature zee rings, but I didn’t like them. The inserts are a pain in the butt and make it difficult to get your scope perfect easily. It kinda squirms around in the plastic while you’re tightening them. They’re high quality and can solve some misalignment issues for sure, but I don’t like working with them. You can buy at least a half dozen quality rings that won’t leave marks and are easy to install for less than $200. I like the Vortex/seekins pro stuff and the Nightforce stuff. I wouldn’t hesitate to try the ATRS, MDT and Cadex stuff either. Plus the last three are all Canadian companies which adds value to me.
I should add that I had a Cadex unitized mount leave some marks on an optic I had. It was an older mount, and it looked like the machining wasn’t fully figured out. I own some newer Cadex stuff and am very impressed with how it looks. I’d give them another try.

I think you have already found your solution. The Burris Signature Zee rings are fantastic, work great and are well under your $200 price range. I have used numerous pairs of them in both 30mm and 1" and they are rock solid reliable.
 
if your rail is not dead straight (check with a straight edge in all planes) the most expensive rings won't help you.

This is precisely a situation where the Burris Signature rings with plastic inserts are useful, as they can swivel to compensate for any out-of-alignment.
