Road-kill deer question

Witnessed a deer vs. vehicle accident on the weekend and now have a nice doe hanging at the butchers.
Unfortunately, the doe was pregnant (three fawns).
I've never harvested a deer this time of year before, or a pregnant one (for obvious reasons) and was wondering if the venison will taste different (i.e. due to hormone levels etc.).
The doe was in good shape with only a compound fracture to her front leg. Was gutted within 20 min. and skinned same day.
To please every-one I hung it head up AND head down! :D

We had one that had 2 fawns in her, I don't remember anything wrong with the meat. It would not be unsafe in your situation and hey if you lose it all not a huge waste. I feel kinda bad when I hear about the little ones not even having a chance.
 
Worry more about keeping the carcass cool. Get the hide off as quick as possible, on site if you can.
I carry a small tarp and an old hunting knife in my vehicle for such freezer filling emergencies.
Throw a bag of ice inside if need be when on the road, or if you have to hang overnight in warm weather.
 
guys, remind me in Ontario, can you:
a) keep it if YOU hit it, or is it just if someone else does?
b) you call MNR to let 'em know, right?
c) if it's injured, should you shoot it or will this get you in hot water?
 
You can keep it, but there are rules as to who gets first dibs on the carcass.
you must call the MNR who will issue a certificate allowing you to posses the meat. (Does not interfere with processing)
If you shoot it, you will likely have at the very least a #### load of questions to answer. I have put them down with a knife before. They have sharp hooves, and are very flexible, watch out because they likely will kick if they have enough life left.
 
My wife got a deer this way once. She showed up at her parents house after the accident, and her stepdad said "Take me to the carcass right now!!"

They got back, hung it and called her cousin to come deal with it since no one had experience at her house.
 
I've done three spring deer so far, you're right, they are lean, but I've had no problems with strong taste.
Get the guts out, get the hide off
Get that carcass cooled fast!
Get it to a butcher that will let it hang for at least a week in the cooler.
 
Thanks for the replies guys. It was processed immediately and is hanging in the butcher's cooler.
Yeah, shame about the fawns.
Will post if I find the meat tastes unusual.
 
I think its illegal in BC to keep them. I was told by the CORE examiner that if we find roadkill it has to be reported to the conservation officers and left there.
 
I'm not sure if this is kosher or not. Did you look into the legality of keeping a road killed deer?

Legal to pick up road kills in Ont. but you must report it to the MNR & they will send you a permit to cover the game you picked up.DAN>>>
