For the money, you cant beat a Tikka T3. If you have the $$$$, go for the Sako. I have a few Sako m75 rifles and a couple of Tikka T3 in the LS models-great shooters. I personally prefer the model 75 stock over the model 85
 
I'll throw my 2 cents worth in... I haven't tried, seen up close, or felt it but I'm seriously considering a Rem 798 for my next rifle. They have CRF (licenced from Sako), a Mauser action, and for not much more than $550 (798 SPS msrp). Seems worth checking out.
 
Given your choices, Sako hands down. Why not restock the old M70 with a synthetic? A MacMillan stock would be cheaper than another rifle. For short and light, the Remington Model 7's are a pretty slick little gun.
 
Personally. id skip the sako (sold mine)

Get a Nice Remington rifle (good compromise price performance imho)

and get a good solid scope to go with that (spend the difference)..

if you don't hand load get a 308 or a 30-06 for the animals you want to shoot as they have prob the most bullets available for your gun good selection is always better.

and a nice remington 700 (choose the one you like) with a very good solid quality scope should put you on the right path.

Personally having built up quite a few guns i like to make sure i can get a good quality scope(afford) to go with my new rifle it makes a world of difference imho and saves you a-lot on reliability issues.
