Salut!

I'm looking for advice as I'm pretty new to the centre-fire rifle market. I would like to purchase a decent, starter, military-style, non-restricted rifle. I've been reading a great deal about Norinco and SKS, but neither seems very available unless I'm willing to pay through the nose. Is there an alternative that anyone could recommend?

have you looked at CZ858? they are nice. wolverine has them,
 
I'm trying to keep it below $350. I'm not too concerned about whether it is semi-auto and as for calibre, I'd like to stick with 7.62mm. I'm not too concerned even if it is new or not, just in good firing condition.

For 350$ and 7.62 you can't get a 858 or M-305 that pretty much leaves the sks in 7.62. I saw an ad on the exchange for an sks from ARMCO for 100$ (http://www.canadiangunnutz.com/forum/showthread.php?t=136576&highlight=sks) and you could buy an aftermarket stock. So for about 200$ you could get something like this.

Look around at gun shows, in the newspaper, etc for a used bolt action hunting rifle. You're unlikely to find a big brand name for $350, but you might find a bubba'd Mauser in .308/7.62. Or a Savage 110. Or a Remington 788.
