It's an indication of the receiver size:

CZ 600 ST1 - steel receiver mini size (223 Rem, 7,62x39 etc.)
CZ 600 ST2 - steel receiver medium size (308 Win, 6,5 Creedmoor etc.)
CZ 600 ST3 - steel receiver long size (30-06 Sprg, 300 WM etc)
