should I move to a 175 - 178 grain for my 308Win Savage?

I'm still using the 155 gr Sierra HPBT Palma MatchKing 2156 which was "de rigeur" a few years ago when I bought them. Other 155's seem to have supplanted that bullet, but I have several hundred and it's still a fine bullet. I use 47.0 grs of Varget (a full case) with that bullet, but I have yet to hear of a load of Varget from 45.0-47.0 that didn't shoot well.

I have a whack of Sierra 175 gr SMK's as well, and I use Varget with them too - again, a full case of 45.0 grs. I have yet to do much work with 208's, but initial testing with RL17 have been encouraging. There's just not enough time...
 
The 155SMK is a superbly accurate bullet. There are the others that are also accurate but are more efficient, being less affected by wind. That may be why they are being supplanted.

Velocity is also a factor. The bullet must be going fast enough for optimum performance. I have watched impressive shooting done by a friend with a .300WinMag TRG and heavy VLD bullets. The velocity is there to make the heavyweights really work.
 
"Are 155s any good with a 1 in 10 twist?" Yes, in fact 2 Palmas ago, John Whidden was the top USA qualifier with 10T and 155s.

I will be trying 208gr ELD's this weekend for the first time. My 28" custom really likes the 175/178gr pills and I'm looking forward to testing the heavier bullets. I tried 155gr Scenars, but my long barrelled custom didn't like them. My Coyote does though.

You can't go wrong upping the weight.

My next barrel will be 1:10 but now with the 12 I am keeping it at 175 tmk
Still working up a load though, so far the 168 hdy bthp shoot better though.
