Should I sell my 870 express to buy a Mossy 500??

If you already have the 870 why buy a Mossberg? You won't gain anything. Either is fine, neither will come flying apart on you if you take care of them. I'd keep the 870 and buy a bunch of accessory barrels and enjoy the boom.
 
I own both an 870 Express and a Mossy 590A1. Use the 870 for turkey and deer, and the Mossy for multigun competition. I like the 8+1 config of the Mossy and find it faster to reload in a hurry, none of which matters on a hunting shotgun. While I like my 590, I certainly wouldn't sell my 870 to buy one as a hunting shotgun. There's a ton of aftermarket and factory parts to config the 870 to do whatever you want it to. If you're really worried about rust, send it to Casey at TacOrd and have him parkerize and teflon it.....or just keep it oiled.
 
Take care of your 870 ie cleaning/oiling after each use and before you store like you should do with ALL guns and your fine.

ditto. A light spray of Rem-Oil and you're good to go! All of a 2 minute job.
You could also have the thing Duracoated or parkerized if you're that worried.

Every firearm will rust if not properly maintained. Obviously painted steel is more prone to rust, but still easy to prevent.
