I presume that the two rear screws are for windage and elevation, but which ones which?

The middle screw is windage. Loosen just a bit, too loose and the parts may move too easy.

Far left screw, when loosened, will allow you to move the sight up or down on the ramp for elevation. As Lodi pointed out, the middle screw allows movement of the "V" notch either left or right, for windage.

Most of the guys I know would have just loosened one of the screws and seen which part came loose. Just sayin'! :)

I'll second Lodi's post above. Those are not terribly precise units, simply a clamp screw holding the parts in place on a dovetail. There is a bit of by guess and by golly, involved in getting them adjusted to shoot accurately.
One of the blessings of modern tech, is that you can take a pretty decent picture up close, with a cell phone, so you can compare where you started, with where you ended up after a change. If you feel the need.

Dunno if there is a scale on the far side of the site, but you can make one from a couple strips of painters tape and draw a pencil line across the sliding joint to be able to see small movements of the surface.
