I've posted a few threads asking about getting some upgrades for my old Sistema Colt 1911A1, but people say I should leave it alone because its a collector(?)

Mine was made in the early 1940's (the serial number identifies this time period)
The finish well worn, but i have the original grips.

Does anyone know what the value of one would be and if indeed it is a collector?

Need to see better, clearer, close up pics, preferably one of each side.

Value depends on original condition & whether your pistol is one made by Colt for them, as in the initial run, or the later versions which were produced there under licence from Colt. And if it is the latter, if the frame, slide & small parts are matching. [The frame, slide, barrel should have the same serial number on them for these].

Sistema Colt 1911A1's whether the first run made by Colt or the latter mfg under licence are not as valuable as original Colts from the same period. But they are collectible nevertheless. Again, depends on condition as to value.

Your Modelo 1927 is a good collector piece as it is an interesting 1911 variant. I've seen ones in that shape go for $500.00. Military Colts get scarcer all the time.

A new Norinco 1911 will cost you $399 or less if you shop around.

mine has "D.G.F.M. (F.M.A.P.)" written on the left hand side in big letters.

the one on the EE looks like it has different writing on it

His is actually the first run made by Colt for them. Generally more collectible than yours because it was actual Colt mfg [and marked as such] as opposed to yours which is the latter model made under licence from Colt there.... ;)
