I get the hide off when I have a clean place to do it, provided it's cool enough.

If I have a place that will remain @ just above or at freezing Let the hide on for 3 weeks. This makes the meat tender and very tasty. Only problem, you need a meat locker with constant temperature.

35-40 degrees F... or 1.5-4 degrees C and you can hang them... a week is OK... any warmer is not good skin and cut right away... and frozen accomplishes nothing!
