Shot a large doe a week ago. We could not find her that morning or afternoon temp was 7-10 degrees piss pouring rain, went out the next morning and the temp had dropped down to -2.

found her with her head buried in a bog and half of her body including the bullet hole was out of the water/mud.

She stunk. Now I have smelled gut shot deer and they stink, but usually clean up after they are dressed and washed out. This one, I washed out hung it for a few days in sub 0 temp took it to the butcher and it still stunk. I got it back from the butchers 2 days later and my freezer stinks now. The Butcher is very reliable and experienced. He stated that the meat was definitely not spoiled.

The deer lived near the swamp so maybe it's just really gamey.

What is everyone's thoughts on this?
 
I can't comment on if the meat is spoiled or not, but you could try marinating the meat in buttermilk before you cook it. That should get rid of any funky smell or taste if the deer hasn't spoiled.
 
Once an animal is gut shot it doesn't take very long for the meat in the vicinity to start to get tainted. I'd recommend not even opening up the deer to gut it and clean it out. Skin it where it is and remove the front shoulders, cut the back strap out, and remove the hind quarters right there. Since it was gut shot the tenderloins are a lost cause and so are the ribs...if you like deer ribs. It seems to work well this way and I know cuz yes, I've done it too.
 
We had a spike buck that was no good as well. It really stunk up the hangin' shed.

Our best guess was that it was injured or otherwise sick already. We took it back out for the coyotes to eat.
