"dissapears" faster than i can make it!!
2 cups coarse salt
1 cup brn. sugar
6 tbs citrus and pepper seasoning
1 1/2 tbs garlic powder
1/2 tbs coarse black pepper
2 tbs seasoning salt
coat salmon steaks (i always 'steak' mine for uniform thickness) place on wire racks in baking pans(to catch drippings) about 5 hrs in the fridge , quick rinse with cold water, pat dry, and they're ready to go in the smoker
i use a bradley (awesome smoker!!) with a mix of 4 alder 'pucks' then 2 hickory 1 1/2 hr @110 deg, 3 1/2@140, then 1 hr @175 (depending how dry you like it)
best served with an ice cold beer!!
