Hey everybody !! Happy Thanksgiving!!! I was wanting to talk to people about smoking deer, how they do it, that sort of thing. I am going to try something a little different this year as I do not want to spend any $ on game processing at all this year. I will be hanging my deer(s) off my daughter's swing set( yes , she gave me her permission!) and smoking the the whole thing before I break it down into parts for cutting up into steaks and such. I've looked everywhere on the net and elsewhere for info on this but no joy anywhere. I am using the swing set because its shape is perfect for hanging a tarp over while having a small firepit underneath stoked with slide alder that I am going to cut tonight while hunting rabbits ! ! ! ! ! I doubt you will find any info on smoking a whole deer carcass, but you might find something if you look for whole smoking other animals like goat, beef, or the like. Do you plan on quartering the deer at least? smaller sections will be easier to handle & smoke. If this is your first time smoking meat I would recommend you start smaller & work your way up. Butchering a deer by yourself is NOT that big a chore. I always cut, de-bone & wrap all my animals for the freezer.
 
Don't see why it wouldn't work just fine. A cool smoke will only add flavor. My suggestion would be to use oak. As mentioned, I'd suggest breaking it down a bit to expose more area to the direct smoke? Doesn't say where you're from; princess auto sells S shaped stainless meathooks for a couple bucks each.

For what it's worth, I've tried making deer hams before by just soaking/smoking. Deer is soooo lean it just doesn't do it. The outer 1/2 " is ham, the rest is deer roast. This year I'm going to try again, and inject the hell out of it while brining for a full 2 weeks prior to smoking. I think that'll do it. (The outer 1/2" was, if you'll excuse the vernacular, delish! :D )

The Surgeon General has determined that smoking a pack of deer a day causes the uncontrollable urge to go hunting more often to replenish the supply.Very adictive!Harold

Deer love tobacco for some reason.....just messin with ya above...a buddy of mine used to do up moose roasts in a smoker very tasty...Harold
