Well, I've finally tried eating bear. Now, granted it was professionaly prepared sausage but I loved it. Now I'm going to get a bear license and death to black bears in Ontario. :D
 
Had bear steaks on the barbeque last night and leftovers for lunch today. Just cook them well - but you don't need to burn them dry - very taasty. Wife, son and I all like bear steaks and roasts. Shoot a healthy young one in its prime for the best meat.
 
bear is good. my brother tagged out on a youngling...estimate it was about 2 years old. man it's made some good sausage! one's you can have with taters at dinner or eggs and pancakes in the morning. :D
 
Bear is fine meat and is much more appreciated when one considers that it's not something bought at the local supermarket. I've had more than one person frown and krinkle their nose when I tell them that I eat bear. Some guys ask, "what do you do with the bear's meat after you've shot one?" I eat it, comes the reply. According to one guy, he figured that bear meat would taste like a dirty armpit. I told him that I've never eaten an armpit, let alone lick one, but I do enjoy a nice bear roast.

I wonder what the same guy would think of a free range chicken...one that eats every manner of bug, snake and other disgusting little crawly thing that emerges from the manure pile around the barn yard ? l


Sort of reminds me of the Butcher who asked the lady cutomer:
"Madam, would you like to try some nice fresh beef tongue today ?" "Oh my Goodness" she replied ... "I could never eat anything that came out of any animals mouth, could you just give me a dozen eggs ?"

My first taste of bear was more than 40 years ago ... and while it's not in the freezer annually, it's been enjoyed on and off for more than 40 years. Like Whelen B recommends... cook it well ... a yearling is hard to beat !
 
I've always wondered what bear tasted like (haven't tried it yet). Next fall bear hunt is definitely on my schedule, and it seem most people who have had it love it.

My buddy shot one near an oat field. Wow that was good meat!
 
Bear smokies on a toasted bun with sauerkraut, hot peppers and a nice spicy mustard.:D

I like bear meat more then deer meat. We cooked up a deer, moose and bear roast up all at the same time ( different pots) I shot the bear that morning but I couldn't believe how good it was!! I seriously couldnt taste the difference between the moose and bear. The bear meat was a bit darker but thats it. The bear was 200lbs max and planning on having another huge roast while moose hunting.....can't wait!
 
Try smoking the Hams. They turn out very nice.

Attaboy! The best sausage I've ever had was a dry salami made from 50/50 blackbear and moose meat.

On a side note, my mother tells me that the Cree put a curse on the Blackfoot that makes them get violently ill when consuming bear. Interesting folklore.
 
I specifically hunt black bears in the huckleberries in the fall. If you can get a bear that has been feeding on huckleberries all fall the meat is fantastic. I was able to get my berry bear just this past Monday. In the snow finishing off the last of the berries!!!
