Speer 180gr Hotcor

Haven't used that particular caliber/weight, but the Hotcors are one of the better standard cup and core bullets in my opinion. You shouldn't have any problems if you do your part.
 
I had one completely disintegrate after hitting the shoulder of a moose quartering toward me.

To be fair, it was short range and fired from a 308 Norma Magnum at a MV of just over 3100, so impact velocity was high.

My son used them in his 300H&H with good success on several moose.

Yeah, that's asking a lot of a cup and core type bullet. This is where the premium bullets come in like the Barnes X-bullets, Bearpaws, etc.. come in. However, I've used the 180gr Speer to harvest several moose in .30-06. At reasonable velocities it will get the job done.

With what load did a 180 308 Norma Magnum have a MV of just over 3100? Hodgdon shows 3,022 the velocity of a Max load of H4831. Roughly the same for Norman factory. Just curious.

76.5 grains of Norma MRP has exceeded 3100 fps in every Norma Mag I have ever used it in.

Norma's original 180 grain loading was with old Norma 205, and chrony'd 3140 in my 24" PH Safari Deluxe.
[Norma 205 and MRP are virtually identical, except MRP is held to closer tolerances, lot-to-lot.]

Today, Norma has tamed their factory loads a bit in deference to some of the conversions out there, thus the slightly lower Velocity.

IMR 7828 and Reloder 22 will also exceed 3100 in a Norma Mag without pressures getting out of hand.
