Stainless will not stay sharp as long as most other blades. You can wire wheel or use paint stripper to clean them.
But I think most people over think the cross contamination. I should have been dead 60 years ago.

I'm old school and use a handsaw of some type ( batteries never die on these.)

After 60, the batteries can die...

I don't split carcasses anymore, everything gets pieced up with a knife.
