Squirrel

I've had it before cooked up like chicken wings boiled then deep fried, it was real good, mind you the eastren red here are tiny. I've been weary as of late because of the increasing number of mites and tick I'm seeing on them, (even if environment Canada says we don't have ticks on PEI).
 
:sok2 :rey2 You mean people leave the poor little squirrel's alone!! I have 6 of them that come to my back deck to get the peanuts that I put out for them. They are like pets!! There are 2 of them that will take a peanut right out of my hand. Way too cute to kill.
 
Take them all the time when we spend a length of time on the river; rewarding to hunt, easy to clean, and tasty. Each individual one doesn't have a big yield, but a handful make for a very decent fresh meal that you didn't have to pack.

We don't do anything fancy to cook them, as I hate packing 'ingredients', but putting a dry spice rub on the meat, and then lash the pieces, bone-in, to sticks high over the fire for a while makes for a great meal.
 
They are now my favorite game to hunt and eat. My wife makes great meat pot pies. I marinate the parts in OJ over night, we slow cook until the meat is almost falling off the bone, then remove the meat and add it to the pie filling and bake. The meat is like cottontail, only a tad sweeter and no gaminess. Check out youtube videos for efficient ways to field dress.

I find squirrel better tasting than rabbit and so do my kids. There is quite a bit of meat on a black or grey squirrel.

To prepare them after cleaning and soaking in cold water for a while. I cut them into quarters, by removing the front and back legs and rib cage leaving the back or loin section.

Brown them in oil in a frying pan with onions, garlic, satl and pepper, mushrooms and green peppers and what ever else you like to add.

After browning on all sides add some worchestirer or soy sauce and some water. Puty a lid on it and reduce the heat so it just simmers for an hour or so and is tender
 
Quarter and Dip in egg or milk then toss in shake n bake and then deep fry. When cooked properly (read do NOT cook the #### out of it) its as tender, juicy and tasty as chicken wings.

Believe it or not, but the majority of people who I convince to try eating wild game prefer this over deer or moose.

That is the way we like them also. One of the 1st things I look for when I visit back state side is squirrel and eggs for breakfast but not these little red rats with tails we have in NS.

To me they are red rats with tails and not the ones I eat. They won't be cute any more either if one gets in your barn or house. Can do some pile of damage in a very short time.
 
The stinking little tree rats made a huge mess in the attic of my old cabin. After that, it was open season. I had a shabby old air rifle that I clocked a bunch with. There was no end to them, though. My Dad used to smoke them with his old Tobin double and Imperial Special Long Range, 12 ga, after they got into his grain bins. In town, there are huge red squirrels. People think they are cute too. My neighbor has a major hate on for any squirrel and uses an air rifle on them.
 
Quarter them and strip the silver skin off then batter heavily and deep fry till crispy next toss heavily in your favourite chicken wing sauce and put in the oven covered for a while at 300 then crank it up to 450 and take the cover off and let everything crisp up again flipping frequently serve with sour cream
