Starting to look for a new, "all-round", and maybe lightweight hunting rifle

Buy the Ruger Hawkeye .260 Rem from Prophet River. I did and dropped it into a Boyds Laminate and I love it. Mine's topped off with a Leupold Vari-X III 1.75 x 6.

I put mine in a Boyd's also, a Pepper Featherweight Thumbhole with a Nikon "ProStaff 5" 2.5-10X40mm silver mounted... very nice rig.
 
I love how everyone is ignoring Savage. Have you looked at the Savage lightweight hunter? It weighs less than 6 pounds and comes in about any flavor you might want including 243 and 7mm 08. Cheesy plastic stock but hey, it works and doesn't cost an arm and a leg either. With your budget You could buy three of these rifles or two and a great scope, unless you believe that Savage is just junk, like many on this board seem to, which is OK too

This is another vote for the Remington Mod 7 in 260, I bought one a few years back and it is a shooter.........Walnut and blued, well finished, fully adjustable trigger, 20" barrel and very light, short and handy...........Bullets available from about 85 gns on the light side to 160 gns on the heavy end.......it is the absolute, bar none, exact rifle you describe and the cartridge was made for the game sizes you describe. Recoil is almost non-existent and it is a screamer with the lighter bullets and capable of taking the largest of game with a 160 gn round nose at modest ranges. Seriously, OP I would take a long hard look at this combo, and it would leave enough money in your budget to buy a whack of cases, bullets, powder and dies..............I doubt you would ever be disappointed in this choice.
