Lead was able to be stored for years and years without a problem. Steel shot if not stored properly can result in a rust ball going out the muzzle of your shotgun. To avoid this from happening I have dated the boxes of Steel shot. Any boxes more than two years I take vise grips and gently squeeze the shot to ensure none have fused together threw time.

Aren't most steel shotshells sealed at the crimp to keep water out? If not I'd put the boxes into Ziplock bags and vacuum the air out before sealing. If you had one of those food sealers that would be perfect. They'd store forever and would make a great way to transport on a long trip too.
