I am unable to get a SAKO .204 for coyotes so was looking at the Steyr 22-250 pro varmint hunter. Any thoughts on brand and calibre? Is the 22-250 a fast flat shooting cartridge?

I can't speak for that particular Steyr model because I have had other Steyrs but not the pro varmint hunter.
The Steyrs I did have were awesome rifles, very very well made and superbly finished.
With respect to the 22-250 cartridge, yes it is fast and flat shooting.
If you reload it is a wonderful round to play with and is easy to develop loads with rewarding results.
Having had two different tackdriving 22-250s, I have to say... Go for it !

I like the older Steyr SL, but they were not available with a synthetic stock (only the M model came in that configuration).

You can NOT go wrong with a Steyr, you will definitely not be disappointed! The 22-250 is one of the best varmint/predator rounds there is as well. Personally I want a 220 swift, but that's just me being me.
