No problem - Different stocks can change the minimum/maximum length of pull on the rifle, if that's something you care about. You might notice a change in balance, too, if the stock is much heavier.
 
Is the gun accurate enough up to 300m? I am not sure of what scope I’d need and whether it’ll be an issue with field stripping. Just trying to see if this would make the shortlist for my range.
 
What is "accurate enough", in your terms? What kind of targets would you be shooting at 300?

The SU16 series generally does not have a reputation for excellent accuracy. Not bad accuracy, either, mind you - Probably on par with other piston driven semiautos (on the less expensive end of the market), but certainly not as good as a good AR. And especially not with long strings of fire (but who can afford to do that these days?). But also, the SU16 is an economy rifle, so most people don't even try to get them to do real accuracy work. However, you never know, you might get lucky and wind up with one that is particularly accurate. If you haven't seen them already, nutnfancy has a few honest videos on the SU16 talking about what they can and can't do. Typical nutn vids though, get comfortable...

Personally, I think the niche for this rifle is to go with a 1x red dot (maybe with a magnifier) or a 3x prism. No field strip issues with these options, and with 3x you might get the practical accuracy you'd want at 300. Or go with the factory irons (only on the base version though - the sight radius for the irons on the tactical version is too short for my taste).

For more magnification, think hard about how often you'd actually need to field strip. I think the service interval is 500rds, and for probably the vast majority of SU16 owners that's more than a lifetime of shooting.

You can also put a low riser on the polymer receiver rail, and leave it there permanently. Then, use quality QD rings on top of that for whatever optic you want. You'd have a reasonable return to zero if you wanted to remove the optic for a field strip, and not have to worry about wear to the polymer receiver rail from repeated on/off of your QD system.

eh, i guess by 'accurate enough' i mean is it on-par with comparable rifles? mainly.. hmm. WK180? Tavor? I realize they're x2 and x3 the cost..
 
Well, accuracy will always depend on the individual rifle and your ammunition selection, but if we're just talking generalities:

The Tavor has a pretty established reputation of 3-4MOA. The WK variants, I don't honestly know but I'd guess significantly better than the Tavor, but not as good as a good AR. And the SU16 seems to have a reputation for around 2MOA (some reporting they can get down to MOA).

But in comparison to these two, the SU16 is probably much more sensitive to heat opening up group sizes during longer strings of fire.
