Your Vetterli is gorgeous. My collection is similar although instead of a Vetterli I have a Swiss Arms and I don't have a 96/11. Sold my Vetterli a while back as I couldn't bring myself to do the bolt conversion to centerfire and I don't like having rifles I can't shoot.
 
Hi,some rifle i did refurb,iron steam for the dent, i used shellac on k31,1911,and rest linsed oil LBO on other,vertilli rifle,1889 only alcool to clean it and oiled after.
For the shellac you need a bit of experience to apply that stuf.....those rifle are so clean and well preserve,its a charme working on it,thank for your appreciation.

K31 mount found it at accumount(ebay)work very good and stable
 
Generally:

Original Walnut stocks before 1945 were finished with linseed oil.
All Beech wood (1945 and later) stocks are shellacked.
All refurbished stocks after 1945 were shellacked, no matter what wood.
