Well, life is good! Just fresh out of camp today. Got home and literally changed immediately into hunting garb, grabbed the 20 and about ten shells. Jumped into the truck for the favorite bunny spot about 20 minutes down the highway. The snow is mostly crunchy underfoot. Am not feeling all that good about this outing. That is, until I hit the green wall of thick cover. Stepped over some fallen branches and seen one literally in mid stride. Just prior to my foot hitting the ground I shoot and score one bunny at around ten yards with 7 1/2 shot low brass hull. Watched it briefly, then another one several yards further out! One side step to the left for a clear shot. Right dead on with Prairie Storm #6 shot. But while cleaning one of them, I cut one of my fingers. Off to the hospital for a tetanus shot. Silly me!!

Sorry, no pics today folks.....:(

Now go on youtube and search this recipe:

THE BEST TASTING SAVORY ROAST RABBIT EVER!!!

The provider's handle is Alutacon BTW. By far the best rabbit recipe I've personally tried. A few of those spices I don't have at my house, but it still came off very well indeed.

Enjoy friend.

Way to go Brutus. Glad to hear you got out there for some hares. Too bad about the finger. Could have been worse, I guess.

I've tried a few of Hank's recipes, several times, and I have never been disappointed. My family and foodie friends never are either. His site is really good reading, too.

Next I am going to try the Kouneli Stifado (Greek rabbit stew). I just need to get out there are shoot some more hares. My health over the past couple of months has kept me out of the woods so the freezer is getting pretty empty. Feeling better and thinking of heading out this weekend. It's been far too long.

^Much thanks ironsighter!

In a search for your recipe, I accidently discovered a cookbook on Greek-Cypriot cooking!!

"Mint, Cinnamon & Blossom Water, Flavours of Cyprus."

Said to be 230 recipes in this very first volume.

And it's interesting that I recently bought for my daughter and her bf, a very nice and well pictured cookbook on Greek recipes.
Sadly the title escapes me right now. But It was chalk full of sunny photos of Greek cities and small shoreline villages.

On the subject of Greek cooking, has anyone discovered how "they" get such a nice strong lemon flavor into the lemon roast potatoes without turning the spuds into mush? (timing for the marinade!?!?)

curious but one serious question

We 1/4 or cube into a glass casserole dish, add beef/chicken stock and a fair bit of lemon juice, cook/braze in oven till most of the liquid is gone then into a buttered hot pan to get the crispy outside

I don't use a knife for skinning them, but I sure do for opening them up and cracking the pelvis...

Thanks for the potato process, BTW. I'm going to use that, next time I do lamb. :)

So thanks to this thread I spent almost 2hrs in the bush yesterday. Was a good work out. Snow is still pretty deep didn't see a single rabbit. Oh well. It was nice a quiet. Spotted Turkey tracks. Some form of predator tracks. I tried to take a pic but the prints in the snow didn't work well with the phone.

How did you manage to cut yourself? I don't even use a knife for skinning rabbits, fur pulls off pretty easy

Uhm, foolish moment of inattention. The one I was removing his head, I think I was striking the neckbone with the unsharpened base of the blade on this 3.5 inch folder versus the cutting edge.

Of course the squared off edge does not severe very well. I shifted hold and my hand was a bit too close on the third effective blow. It tore a flap of skin partly off, versus a straight cut. Bled lots as a result. Was more worried about infection myself, hence the trip for a tetanus shot.
