Hmmm....I've never heard anyone describe the taste of bighorn as tasting like domestic sheep..........
Wow, that many full curl encounters......that is impressive. I spend a lot of days hunting sheep and have only seen a handful of full curl bighorn rams. I must be hunting the wrong areas. How big were the ones you shot?
It didn't taste like mutten (mutton) ...
The sheep I had that I was comparing it to was actually prepared by a 4 diamond chef, and it was big horn. I found that it had a very distinct taste.

The sheep we had ourselves, had that same taste, but much much more pronounced. Both were Trophy's, but not anything that amazed the local guys in the know... I shot one and my buddy Jody shot the other. 300 WSM Savage and mine was with a .35 remington
By your pics, I doubt you hunt wrong areas, ... I just have a couple of good spots, and used to have a connection as far as mountain travel goes..
I've hunted areas that Full Curl was all that's permitted, but never ever saw one there, went back the following summer to do some fishing and saw 2, both within range, not at all bothered with me and made their way up at a snails pace, looking back now and then. To add to the story, less than 1 mile from where I saw them, a wedding was taking place. In the middle of almost no where, practically on the side of a moutain, I spied a golf cart type quad, the ones that people sit side by side in, crossing a river with the Bride in full wedding dress, then 5 more with groom and brides maids, etc etc etc.
There was a cabin back on a trail and this is where they were getting married,... I thought I was on candid camera as I fried a couple of cutthroats on the fire and heard "I knew the bride when she used to Rock and Roll" echoing down the valley.
Mom and Dad are coming out for Xmas and I told them to look for my pics and bring them with them,... I don't have a scanner but there's one at work and i'll put up a few really awesome hunting pics that would be right up your alley.
I have no doubt that you have heard rams butting,... I have one pic of two rams about .5 inch before they hit, one on his hind legs, coming down, the other on all 4's springing up.
I hike all 4 seasons and for a little while did some amteur climbing, ... I have some great pics of that as well,... to look at them now, I could vomit at the heights and ledges.
