Not sure about the Sig clones, but for 1911 grips these two grip makers should have you covered:

For wood check out Sagre's grips at thefinergrain.com. Again, you can custom order from Sarge if you need thinner than he normally makes.

The thinnest grips I was able to find more my 226r were the hogue extreme aluminium ones. I have a used condition set for sale, but if you want new try CFRC. I warn you, they are 179.00 + tax and shipping. So, about the price of a sig clone! lol

Sig actually makes thin grips but they are pretty rare. I was able to get a couple of sets for my DAK's from Top Gun Supply in the US. Unfortunately they do not ship to Canada.
Sorry that's probably not all that helpful but at least you know that there are such things as factory slim grips and maybe someone up here can bring them in.

For the 1911 you'd need to remove the grip screw bushings and use special screws with the same threading as the bushing mounts. Something to keep in mind.
If you really want them THAT thin then aircraft aluminium plates about .050 from 6061-T6 with the edges lightly filed to a taper and then with grip taple applied to the holding zones would be nice. This would make them similar to the thin aluminium grips I can get for my CZ. The bigger issue would be getting suitable grip attachment screws unless such a thing is already out there.
If you're doing this to make it easier to hold and reach the trigger then on the 1911 also consider that you can get different reach triggers for these guns.
I'm not sure about the same sort of optional thin grips for the Sig though.
