I previously made a SVD stock for my SVT out of walnut. Walnut is very strong and offers a very "American brown rifle stock " sort of color, which I found difficult to stain to a more "Russian red" kind of color afterwards. Walnut is also expensive.
I just bought a bunch of Eastern maple blanks yesterday for my AK style CSA stock project.... Eastern maple is also very strong (used to make baseball bats) and is a very bright type of wood (pine color sort of), it is also half the price of walnut. Because it is bright, it is very easy to stain all sorts of beautiful colors....
