I am in the process of making sausages and while I was rumaging thru the freezer I found a deer roast from the 2006 season. I vacuum pack everything so it looks very good, no freezer burn.

Question is, should I still use it or toss it in the bush?

Freezing does not STOP the spoiling process, it only slows it to a crawl. It very well might be edible, but I wouldn't chance it. Thaw it out and test it on the dog if you want....LOL

Ummm OK. It must be a pretty slow crawl then. They are still eating 20 yr old whale meat in Iceland leftover from when they still had a hunt and they are eating it raw.

Properly vac packed and kept frozen the meat could last many more years. If it looks fine and smells fine then eat it. We just ate a moose roast from 2004 we found hiding in the corner of the deep freeze. It was wonderful.

As for the original poster, throwing that roast in the bush would be (should be) considered wasting game meat; a wildlife offence in most places. If you have vacuum packed it and there is little / no freezer burn it is just fine. Enjoy your roast. I have eaten properly frozen meat that is that old and enjoyed every yummy bite!

I do believe the intent of the regulations was to stop the waste of freshly killed game.

I am thinking that if your own health is at stake, there would be little or no questions asked if you threw something out. GIVING BACK to all the predators, in my opinion, would not be wasting it. Throwing it out with the kitchen garbage would.
 
Eat it.

If it was freezer burnt, I'd say trim it and eat it.

Vac-Packed? Not a second thought about putting it on my table!

Are you starving, and have no other meat? If it is not a desperate situation why chance it.

My GF always wants to argue with me about expiry dates, and similar situations.

I have had food poisoning twice and in 1 case I was in bed for 3 days absolutely dead sick.

It is simply not worth getting sick over. $20 roast vs. 2 days sick.
 
freezing DOES stop the spoiling process. The only thing that happens after a while is freezer burn and drying. A bit of freezer burn on the outside is not a big deal; just cut it off.

Even if it's dry and has a bit of freezer burn should be good for sausage at least.

2006 should be fine to eat if properly packed and kept frozen.

Can you explain any mechanism by which he would get sick from a roast kept in the freezer for two years? Anything other than your intuition?

If was safe to eat when he put it in, it will be safe to eat in 30 years so long as it remains frozen. The worst he would get is freezer burn which just makes stuff taste "bad". Freeze dried foods are just that -- freezer burned until all their moisture is gone.

If it was me I would prolly eat it to but the point is that if he is unsure about it why risk it. I wouldn't think twice about it if I ever had to go online and ask a bunch of guys what they think he obviously is concerned.
 
Good Timing.....

I made a roast two days ago from 2005. Found it under a bunch of frozen chocolate Easter rabbits......

I put it in the slow cooker and it was fine. It was moose.
