If it was me I would prolly eat it to but the point is that if he is unsure about it why risk it. I wouldn't think twice about it if I ever had to go online and ask a bunch of guys what they think he obviously is concerned.

He would only be "risking" something if there was a risk. He's pretty much been told that there is no risk. I've got 6 years of post secondary biology education, and 26 years of hunting and eating game behind my advice.

Those counselling him to toss it or feed it to his dog need to give their heads a shake and educate themselves a little.
 
freezing DOES stop the spoiling process. The only thing that happens after a while is freezer burn and drying. A bit of freezer burn on the outside is not a big deal; just cut it off.

Even if it's dry and has a bit of freezer burn should be good for sausage at least.

2006 should be fine to eat if properly packed and kept frozen.

x2. I ate a caribou roast from '01 last week. Cut the freezer burn off, good to go!
 
Eat it

Your stomach and or ass will let you know within 24 hours if it's good or not.

Worst case scenario:
your thaw it out, it looks bad and stinks, you cook some up anyways, try it and it tastes bad, your force yourself to finish it. Your stomach moans and groans all night, next day you keep running to the crapper and can't take a straight dump.... not that it's happened to me or anything, but you'll survive and you'll be able to spot bad meat from a mile away.
 
my dad doesnt eat alot of game meat but loads of sausages he always brings me his old roast ect and get me to make sausages once he get fresh meat lol dont know why but thats him. lots of times there a mix of moose deer elk and just grind it all and make him sausages.he says he does it that rather then make it with the fresh meay so his roast and that are fresh lol but what ever he wants to do at least hes using it all.
so saying that YES if you choose to use your old games meat to make sausage it will be just fine :)
 
Found a pack of deer cutlets from 07 back in Sept. They were just double bagged, not vac-packed. They were fine. Vacumm packed should be good for a lot longer than that.

Even if it was freezer burned, I'd marinate it and slow cook it. I've eaten "fresh" beef from the supermarket that I know was actually thawed out after years in EC intervention storage.
 
id like to know how you guys can keep meat around for so long. when the wild game supply is getting low during the following summer i often find myself ripping everything out of the freezer in search of meat. ;)

there are only two things id worry about when eating meat thats been frozen for a long time. freezer burn and if its been thawed out during a power outage and refrozen.
 
Sheesh!! Can't imagine not cooking that up and eating it. I have several times over the years found an older roast in the freezer, hidden by some other [less worthy] foodstuff. Always have just cooked it up and eaten it. If there is a spot of freezer burn, I just cut it out, since it tastes "off" there at the burned spot. Other than that...good to go...enjoy!! Eagleye.
