Title sounds bad I know.
Took pics of the field dressing of my moose yesterday using a method I use a lot on animals I harvest early in the day and have lots of time to work with (and don't plan to mount of course).
It involves cutting them open from the tip of the jaw to the anus and removing tongue, esophagus, trachea and the guts all in one piece, essentially removing all the plumbing at once.

Anus and urinary tract cored around with a long knife
Skin is cut all the way to the tip of the jaw, the ribs are split, and the tongue, trache and esophagus hauled out through the bottom of the jaw.
Everything is out at once. I like doing big game this way as it aids in cooling and allows drainage no matter how the animal is hung.
