Treat hanging game with vinegar????

just started using water/vinegar this season. the owner of the ranch I hunt with recommended it. I figure he has shot and butchered more game in his years then I have probley seen. don't know if it makes a difference but then steaks are dam good
 
I butcher my game in less then a week.

hanging for any longer is not required in my opinion, 'aging' is just another word for rotting as the meat breaks down it becomes more flavored and tender.

If I want an 'aged' steak I'll do that in the fridge after rather then risking an entire animal.

as for wter and vinagar, thats what I use to clean any parts of the game that needs a wipe down
 
Going to go with the ' Hanging isn't really necessary' school of thought on this topic.
Mine get hung only to cool and often because I've run out of expendable time at that point.
I was on the fence but I'm leaning toward the 'Not necessary; just butcher it and be done'
I don't see that vinegar will hurt it, but butchering it before it gets a chance to 'Turn' negates the whole exercise
 
I have looked in to this a bit but have never used it. Sounds like it is a very popular method of wiping down after skinning. Haven't seen anyone say it has produced negative results.

From what I can see the negatives are just another myth that they heard somewhere.

I have always just used water but will try it in the future.

I have only use water in the past was well. From all the responses (much appreciated by the way) to my question, it seems like a good idea. I like the pepper idea too....
