I got a great deal on a Remington R1 stainless (thank you Jo-Brooks) and have already replaced the grips. Now I am thinking of polishing it to a bright mirror finish. My question is this: could I remove the trigger guard without making the thing prohibited? I've seen some photos where this is done and it looks amazing.

Trigger guard is a safety device, why would you want to remove it? Aside from looks.
People remove firing pin blocks, grip safeties, and manual safeties all the time without people saying what you just said. Not to mention lightening trigger pulls, hand-modifying sears, etc. While it's definitely drastic, I don't see this being much different.

Want safe? Drop mag, rack slide.

I'll never understand why people, typically people new to firearms, want to go and #### up a perfectly good looking firearm, it just makes no sense at all. And then they try to sell it and wonder why nobody wants it.

I will never understand why people buy firearms only to starve them, or why they buy stupid SH!t like lasers and custom grips but never invest in professional training. To each their own. I personally see no productive reason to remove the trigger guard.

Trigger guard is there for a reason, to prevent accidental discharge, OTOH it's your gun, do what you want, however, once the trigger guard is gone, the chance of selling it, shall we say, will be rather slim.

Of course it's different, get a grip
