Turkey Prep Question

after plucking and cleaning wash in cold water, cut pockets into skin and slip slivers of butter into pockets around bird. lightly salt outside of skin as well.Bake in oven and enjoy one juicy turkey! I havent tried stuffing one yet but on tuesday april 25 Im sure Ill give it a try for supper:)
 
They are easy to pluck. Would be a lot easier if you could do it while they are warm. They are dryer than domestic so try keeping moisture in. The best birds are the small jakes, some toms can get a bit chewy
 
They are difficult to pluck with out tearing the skin. The best way is to scald them first. Then pluck it does a nice job. I don't bother any more because its a waste of time to roast a whole wild bird. IMHO the legs and thighs are too tough to cook this way. I prefer to skin the bird, seperate the breast from the legs and thighs. Then cook them seperatly. The legs and thighs are good stewed in a slow cooker or deboned and ground .
 
Once cleaned & plucked, they are unbelievable deep-fried in a Turkey Cooker.

Inject them up with a little Cajun marinade & coat the skin with a little rub.
About 42 minutes for a 12 pound bird. YUM !!!
 
Here is a new way to prepare your turkey:


1. Cut out aluminum foil in desired shapes.


2. Arrange the turkey in the roasting pan, position the foil carefully
(see below)


3. Roast according to your own recipe and serve.


4. Watch your guests' faces.

Seriously though,

I work at a butcher shop and they do a "Smoked Turkey".

I don't work in the kitchen part, but the turkey is marinated and smoked.

It is kind of like making ham, but with turkey.

AWESOME!!!

Maybe someone in your area does this. It's well worth looking into.
 
Filet the breast meat off.. Each breast is huge, like my gf's but they cost 5 grand. I cut each breast in half atleast, to freeze. Filet the meat off of the legs and any other pieces left.

Cut the breast meat in "fingers", marinade and BBQ.

Take the leg pieces, dip in milk and flour then fry in butter.

Man I can't wait to see the look on the Mother-In-Law's face when I pull this stunt :D :D :D Thanks for the awesome idea
 
Last Christmas I gave directions in OFF TOPIC about brineing a turkey.

I have never tried it on a wild turkye, but I sdont' see whay it woudlnt' work.

Using a brine will give youthe juiciest turkey imaginable.:)
