The hand behind the shoulder is SOP at every full-auto rental shoot I have ever seen.... I find it a bit annoying myself!! But safe is safe! The renter never knows if the person firing has any experience with the weapon. With his hand behind the firing shoulder, he is prepared to catch the shooter immediately if he looses his balance... Some FA guns have quite a bit of recoil while standing in full-auto! And we all know newbies lean backward when firing unfamiliar weapons...
