What 7mm Cartridge

Well, depending on the discipline chosen, the 280 Remington or the 284 Winchester would be great, or the 7 SAUM.
Virtually every competitor I have been on the line with or spoke with over the years hand loads, so factory ammo does not enter the equation

Hand loading or not brass availability isn’t great for any of those. 280 and 284 are probably the easiest to find. Who makes 7mm SAUM brass? I see Norma and Nosler.
 
Interesting, kinda looks like a shorter neck 280ai with a 35° shoulder? Lots of good options out there 284 is what every one shoots. But trying other things is fun too. If you want something with a magnum bolt face go Saum or 7 sherman short if you want something different. Or you can jump to a 30cal and run a 300 Sherman short or a 300wsm.
 
Ok lets here your thoughts on the most sensible 7mm/.284 cartridge to build a target rifle with, wanting to shoot out to 1000 yards,

I really like the looks of the Gunwerks 7mm LRM but no decent brass as of yet and will be at the far end of sensible with recoil and barrel life but should be perfect for chucking those 195gr Bergers,

Im looking at the the 7 SAUM since you can get quality brass for it now and I do have a Defiance Rebel XM mag bolt face action on hand.

280AI, 284 Winchester, 7 SAUM, 7 LRM, 7 WSM ?

Your first sentence causes me to think "why re-invent the wheel" 284win! Lapua brass, 180 or 184 Berger Hybrids, H4831 or H4350. just sayin
 
I just researched this topic to death and in the end decided to stick with 7 Rem Mag. I’m already set up for it and it packs a punch. Barrel life is about 1500 rounds.
 
Standard reamer? What brand of brass? What bullet weights with velocities? Thanks

Rifle is off tomorrow to get a new barrel and other work so all data will change. Gonna use Norma brass and Berger 168’s and others in the 154-175 range also. For powder will play with H1000, retumbo and superformance whenever it comes back.

Don't FORGET about IMR7828 and RL26 - they both work WELL in the 7 MM Remmy Mag ! RJ

It does sound like a great option Bare,

Im having good success with the 6.5 RPM so I figure the 7mm RPM (Canuck) would be a great cartridge as well, very similar to 7mm Rem Mag in a non belted cartridge, now if we could get some decent aftermarket brass it would be even better.
