What are the best tasting birds in BC?

New PAL holder and hunter here. What are your favorite birds for eating? I've heard good things about sand hill crane. I have heard duck is hit or miss depending on if it's a dabbling or diving duck. Ruffed grouse seems to be popular in my local area, with multiple locals complaining about the taste of spruce grouse. Anyone tried wild turkey from BC south?

Wife quit eating grouse so I quit shooting them. She said they're just too dry and didn't like the basic flavor anyway. She is a marvelous cook with everything. Elk, moose, bear waterfowl, but is not interested in grouse.

It’s been quite a few years but the last time I was in BC I had KFC. Quite good not too dry, maybe a little on the salty side.
