What caliber should I buy next?

The only perceivable "gap" in your list of cartridges is between 223 and 270. I think a lighter recoiling 6mm, .257" or 6.5mm bullet launcher would fill that gap nicely. I don't know if you reload, as that would determine which cartridges would be suitable candidates. It would also depend on what your intended use is: target or hunting? If target, the 6.5 CREEDMOOR seems like a good candidate in a heavier rifle, would also make a dandy chambering for a lightweight hunting rifle. Of course, for the hunting rifle the list of possible chamberings is bigger: 243 WIN, 6mm REM, 257 ROBERTS, 6.5 CREEDMOOR, 260 REM or 6.5x55.

Swap the 303 for a 300 savage and 270 for the 25/06 and the hmr for the mach2 and I have you same line up. I have a love for 25 cal and am looking into acquiring a 25/20 lever and 25/35 custom hammer gun and a 250 savage. The savage will be first it's just a decision to go case colors and fancy wood or new age modular design
For a custom the 25/45 sharps
For boring and to be like everyone else 243
For Speed 264 wm
For varmints to deer 25/06
For something different a lever gun in a pistol round like 357 or 45 colt. Can be loaded with light cast for bunnies and grouse or loaded up for deer
For same class power 338 fed
I do suggest a big bore of any power lever you're comfortable shooting
 
'm selling the 300WM as I don't have a use for it(can't get enough moose hunters together to get a tag).

Have you considered keeping the rifle and getting new friends who will hunt moose with you?

Maybe its because I live in a province where I have yet to draw a moose tag in 15 years of trying, but I don't know a single hunter who would say no to a moose hunt.
 
OP from your original post I'm seeing your gap if you can even call it that is between your 223 & 270.

If you're into coyote/wolf hunting I'd suggest a fast .224" like a 22-250 and/or a 243 Win if you're not then the 243 for deer but really you're totally covered with your 270/308/30-06/303 already.


With the guns you have right now you're saying you don't want to go 25-06 because it is so similar to you're 270 here is my suggestion keep the 300 WM sell the 270 and 303 and get a 25-06.

I have two 25-06 rifles now just got involved with the cartridge over the last 1 1/2 years they are definitely fun guns I have my 24" barreled T/C Prohunter loaded with 120gr Nosler Spitzers @ 3000fps and my Rem 700 XCR 11 loaded with 90gr Bliztkings @ 3440fps just starting to work up a load for the rem with 100gr E-Tips should get 3300fps with them.
