what do you do with your meat/sausage?

I can't imagine why anyone would have any part of their deer or bear turned into "sausage."

Any game meat my friends have given me that was turned into pepperoni or other sausage tasted like garlic ring from Safeway. YUCK!

I cut deer and bear into nice edible meat cuts of all varieties and don't ruin it by turning it into any kind of sausage.

How much pepperoni can you eat anyway?

little breakfast steaks, medallion size, best steak and egg ever. stir-fry strips are pretty good too, usually pretty good sized muscle groups for them as well.
 
Our family usually ends up with two to three deer per year and sometimes 1/2 a moose. I agree that after a while we do get a bit tired of the same sausage so I have started to try different types each year and only make one batch each year which makes about 40 lbs. The rest is stew, cutlets or hamburger. We never buy beef burger as we usually have enough wild game and we prefer it to beef. We add 1/3 pork to the ground deer as it keeps it moist.
