There is no one most versatile, but 30-06 will do.
Any cArtridge from 6.5x55 to 7mm Magnum will serve for Mr. Average.
 
Me 3 for the grand old .30-06 ! With a 180 grain Nosler Partition travelling at 2750fps, there is no animal that walks North America, Europe, Asia and most of Africa that I would not hesitate to go after.

Recoil comparable to the 3006, flatter trajectory, better sectional densities... Pretty hard to argue with.

I hate to say it, but assuming you can shoot it well a 300wm or wsm is pretty dang versatile. A bit more omph for the big critters, particularly big bears and bison... I've seen a well respected guide express disdain for the 7mag as a bison cartridge.

Any WWII main battle rifle cartridge would do the trick.

Anything in the 6.5 Creed-30-06 category would do the job and have reasonable recoil. I would probably choose one of the 7mm Magnums for myself.
