What is the most AR-like Non-Restricted rifle?

Yeah your registration certificate! It says Non-restricted! So you can keep the gun hangin on the wall as long as it is trigger locked and unloaded, seperate from ammunition. you don't need to do anything with it to transport just put it in the trunk.

I think he was asking about having 10rd pistol mags for his ar...how would cops know whether its a pistol or rifle mag?

They wouldn't but really unless they were loading them they wouldn't know how many rounds they hold. I believe they are stamped L.A.R. But regardless they are shorter than the ar mags that come pinned so cops wouldn't think twice. They would check your original mags before worrying about the shorter mags.
 
.... Also where could a guy find documentation to print off showing that it is legal (to keep in gun case in case of the all-too common event of over zelous cops busting balls over it)

Notice in the final ruling that easy posted where it says:

NOTE: - The two magazine designs with the above markings are deemed acceptable as "magazines for use in a handgun commonly available in Canada"; they do not qualify as "prohibited devices" and the further use of these magazines on any other firearm is not regulated.

This is the part that jollyroger was probably looking for.
