Actually one of the four sub-species of Guinea Fowl, your photo is of a Helmeted Guinea Fowl ( numida meleagris ) ... native to Africa, introduced to France and the West Indies and domesticated elsewhere. Hunted as game
birds in Africa ... and I can attest - in Cuba.
The French refer to them as being the " Queen of Poultry ", and are the
"Sunday dinner bird of choice" in France & Italy.
I've had them many ways ... from roast whole birds to the basis of soup.
Certainly more flavourful than chicken and in some ways would remind you of pheasant. They can fly ... and run like hell too. Often used as "watchdogs" ...
they kick up a noisy fuss (like domestic geese) when someone or something
strange is around !
