What knife do you use for rabbit dressing?

small tree pruners are best for removing the feet and tail and i prefer a 6-7" fillet knife for any cutting. for the head just cut down to bone all around and twist the head off.

i breed and butcher rabbits and the pruner and fillet knife is definitely the fastest.

whack, hang, slit throat, nip off feet, yank off hide, gut. takes 2-3 minutes. 6 of em are heading for my freezer this weekend so i'll time it ;)
 
I usually just peel the skin off, crack the legs and pull them off, twist the head around until it's ready to pull off and then tug it off. You can gut them by pinching and peeling the belly back and then just dump the guts. No knife needed at all.
 
poultry shears cant be beat. I have a pair of pc ones from superstore, and their awesome now I just need a sheath for them.
