This year I'm thinking of taking a Victorinox Rabbit boning knife and Sheep Skinner (if I have the space for it).

The rabbit knife is one of my all time favorites!

Used a 307 Buck stock knife for almost 50 years. I has used a belt case for a small flashlight to carry it and a tiny steel slid in beside it. I skinned out a moose for a guy who didn't have a knife once even . He was amazed I even cut off the legs with it.
