what scope for a lightweight sheep hunting rifle?

Talleys
Leupold VX 2 in a 3 - 9 lightweight
Leupold site says:
Eye Relief
low 3.40 in
high 3.10 in

Well guys I am finding this combo very difficult to shoot from a bench, or shoulder the gun standing.
At 7 power seems I have to move my head way too far forward, most awkward...

The Howa has a long length of pull, believe 14"
Since Howa includes Talley's with a 3 - 9 vortex scope I thought the Talley's would be great mount for this set up.

Hope there is an easy solution, something I am missing.

Option 1
So ordering new rings.
Swapping out the Talley's for heavier Leupold's

Option 2
I have 2 heavier, yet better eye relief scopes on hand I could use.

Nikon Monarch 3, 2.5 x 10
16.6 oz
4" constant eye relief

Zeiss Conquest HD, 2.5 x 10
17.5 oz
3.54" constant eye relief
 
Guys what scope for a lightweight sheep hunting rifle?

20" barrel in a 7/08 or .308

Perhaps a Leupold 2.5-8x36?

I like a little bit more magnification. I have a elk gun and its hard to determine if the elk is a 5 or 6 pointer (legal or not legal) on 700 meters and further with 8x max. Other choice is to carry a spotting scope which will ad way too much weight, so I'd opt for 4-14x.
