As for cutlery .. one good 4 inch drop point FFG blade will handle all gutting on a good sized bull - you don't need a quiver of knives - but bring a small steel for occasional touch ups. If you have a chainsaw ... it can be useful BUT not necessarily handy. A small folding saw that locks properly with a good blade will do nicely for rib cage and legs. A good axe is also useful if it is handy. Since you are asking this question ... avoid any upswept blades as this is a pretty sure way of puncturing the bladder ... a very bad thing to do.
And for god sakes ... don't shoot it if you don't know for sure you can get it out of the bush... or have the necessary help available quickly to get it out. A good sized bull is no joke when you need to move it any distance.
