What's the deal with pepperoni?

Seems like every season I read about someone getting a "pepperoni bear" or getting half their deer made into pepperoni.

Do people really eat that much pepperoni? I rarely touch the stuff.

I might have eaten one stick of pepperoni in the last 8 years and that was only because a buddy gave me some of his home made duck pepperoni. And it wasn't very good. Tasted like the generic blend of sausage spices Cabela's sells.

I'm not a snacker, I don't eat between meals and I like my game meat to taste like, well, game meat.

So what's the attraction? Do people sit around and eat pepperoni while watching TV? Driving to work? Make sandwiches? What's the deal?

I am just finishing up making 200 lbs of moose sausage. Jalapeño/cheese smokies, jalapeño/cheese snack stix, honey garlic pepperoni, ham garlic pepper smokies, pepperettes, garlic coil, regular smokies, hot sweet pepperoni.
 
A 70/30 mix of wild meat to pork or Canadian back bacon is the primary ingredients to Polish-Wyoming or Wyoming-Polish sausage however you prefer. This is a very popular mix on the Canadian prairies. No surprise is derived from an eastern republic.

Just another way to eat meat and it is very portable. I always ate it at work, prefer the drier stuff, lower fat as well.
 
People turn geese and bear into pepperoni because they taste like crap. Mixing them with half pork make them almost eatable. Someone brought some Canada goose pepperoni to work last week, I ate a piece but its not what I would spend my money on.


I prefer to eat my game straight up, roast, steaks or ground. I have a buddy that makes deer jerky that's not bad.
 
I know guys who turn their entire deer into sausage... How much sausage do you eat in one year bruh?

I don't get it but it's their game and shall do whatever they please with it.

I read your post and automatically knew you were from Saskatchewan, your location didn't lie! People here sure love their beer sticks, smokies and pepperettes! haha
 
I will say it straight up, I don't care for goose but it is my hands down favorite to hunt. I don't waste meat and get it made into pepperettes. To me it hides the fishy taste I don't care for and everyone I give them to loves them, win win.

I am not a big fan of wild meat for steaks, roasts or ground simply because I find it to lean. I do however enjoy a good moose stew.
 
I would never waste moose, caribou...or even bear...by making it into pepperettes. But deer? I just don't care for deer meat, so the bulk of the deer meat I have each year is used for dog food. A small percentage makes its way into 20 or 25 pounds of pepperettes or kielbasa, always with a good admixture of pork or pork fat.
 
I get fed up with steaks and hamburg, cubes and roasts so our venison guy does smoked meat, sausage and jerky on top of the regular cuts. It does vary the weekly menu.
 
I really can't understand why people don't like goose. It is among the favourite game meats in my house. Slow roasted in the oven. Yum!

I hate sports too by the way. Rather watch paint dry.
 
I get all of my venison turned into pepperoni or pepperettes. I use it for snacks all of the time. I find if I leave it as steaks I forget about it in the freezer downstairs but as pepperettes or pepperoni I always have it in the fridge.
 
Depends on the year and what I feel like doing with my deer meat. I personally like mostly steaks, some roasts, a bit of stew and grind, and 3-5 lbs jerky. I like pepperoni as well, but we got a lousy tasting batch once, and never got it made again. I think it was either a mixed with other deer batch or the pork fat was old but it turned me off getting it made at a shop. Not set up to make a decent product here, so haven't bothered trying. My gal on the other hand, would stuff a deer in a grinder starting at the nose and stopping at the arse. She'd get half burger and a bunch of pepperoni or beer sticks if she had her way!
 
Well, if you don’t snack and aren’t a fan of pepperoni then it’s kinda hard to explain.

Bear makes the best pepperoni I’ve ever eaten. For the most part I grind all my bear meat, pepperoni is just another use for ground and it’s fun to make. I’ve never used duck or venison for pepperoni.

Do you have a recipe for bear pepperoni you could share? With a little luck I'll have a smoker before spring bear season and it wouldn't hurt to know a legit good recipe, not a random google.
 
My son and I make an assortment of cuts, roasts, sausages and ground venison. We also make up Pepperoni, Pepperettes & Summer Sausage, this is shared with our family members throughout the holidays. Meat trays made up of Pepperoni, Summer Sausage & Pepperettes is always a welcomed platter at friends or family gatherings. Vacuumed Packed & Stacked in Freezer ready to be pulled out and served anytime.
