So not to jack the thread, but I am interested as well. What would people suggest for a make / model for practicing?
Do you want a repeater, or a single shot? What kind of budget are you on? For single shot I'd look at something like the Diana, its a spring powered piston single shot, light adjustable trigger and good sights. Gamo might have something similar as well.
For a repeater, it will have to be C02 powered, and I have no suggestions as I've never shot any of them enough to give you an opinion. Like all firearms, you get what you pay for, and a good smooth, consistent repeater has got to cost a lot more to manufacture than a single shot. As I mentioned above with the Diana, you should be able to hit a dime at 30 feet. I've had one for over 20 years and its still going strong.
I was told by a collector of air rifles and pistols that the pneumatic pre-compressed are the most accurate. I have a couple of Gamo's and they have been decent quality. Here's one that is worth looking into if you are interested in single shots, bullseye style shooting. Has a lot of the desirable features:

Also, take a look at the IZH 46m. This is a competition quality pneumatic single shot for around $300
